Cookie Butter Pie

Cookie Butter Pie! There are lots of recipes online but I used the NYTs and followed the commenters suggestion to use less sugar. I used a scant 1/2 cup. The pie was a hit.

I just found this in drafts. I guess I wrote 2 November 30 posts but never finished this one.

The cookie butter pie was for Thanksgiving weekend.

As of today, Christmas Eve, I don’t don’t know when I’m making my Thanksgiving dinner. I bought all the stuff but then we went to the retirement home to have dinner with Dad on the real T-Day.

I planned to make it Christmas Day except tomorrow we’re going to the in-laws and they already have a menu planned with ham. I think I’ll probably make it this weekend including a pumpkin pie.

For Christmas dinner, I’ve been requested to bring apple pie. I made the crust today and I’ll assemble and bake tomorrow and it will still be a little warm when we cut into it after dinner.

I bookmarked this clip ages ago. If you don’t want to click, it’s people being asked to peel and slice an apple for pie. They chose people who don’t know how to do it. I appreciate that people have different skill sets but this still cracks me up

My sister does the apple in one long coiled peel and then cuts into quarters and slices. I cut into quarters, then peel, then slice.

Over the years I have tried lots of different methods. I tried one where I cut the quarters into roughly equal chunks and did not like the texture of the pie. I try to slice as thin as possible but I don’t get worked up about it. I toss with lemon juice, sometimes a little bit of zest and then the sugar and cinnamon. I like to let the filling sit a bit if I time it right. I like to cram in as many apples as I possible. I always use foil or something under the pie because it always bubbles over.
